Korean Beef & Carrots



Korean Beef & Carrots is a dish made using Beef Stew Meat or Beef Heart in combination with Carrots and quinoa. If we're feeling adventurous, we can also add snap peas to the mix. It's a delicious recipe with both meat and vegetables, and it's made without much hassle. For this recipe, we need the following:

  1. 1-2 lbs. of beef. This could be either Stew Meat or Beef Heart.

  2. 1/4 tsp. of black pepper

  3. 1/8 tsp. of salt

  4. 2 tsp of olive oil

  5. 2 Cups of chopped pearl onions (optional)

  6. 3-4 Tbsp. of soy sauce (or sauce of your choice)

  7. 1 Tbsp. of packed brown sugar

  8. 1 Tbsp. of lemon/lime juice

  9. 2 Tsp. of minced garlic

  10. 1/4 tsp. of red pepper flakes (optional)

  11. 2 cups of carrots (Julienne-cut)

  12. 8 oz. of fresh snap peas (optional)

  13. 2 cups of cooked quinoa (or rice)

First, we'll start by thawing out our beef - either beef heart or beef stew meat. We should give the beef at least a couple of hours to thaw out. Should we choose to thaw the meat in the refrigerator, we'll need to give it even more time. Once the beef is thawed out, we can remove it from the paper and, if it's heart meat, cut it into bite sized pieces.

Next, we'll season the beef with pepper and salt, or whatever other seasonings one might prefer.

Following this, we need to heat our olive oil in a large skillet at medium-high heat. We can then add the beef and start browning it in the pan. The meat should take about five minutes to brown.

While the meat browns, we can begin preparing our vegetables. In a large crock pot, we can combine our chopped pearl onions and our carrots. When the beef is done browning, we can toss it straight into the crock pot as well.

In a small bowl, we'll whisk together soy sauce, brown sugar, lemon/lime juice, garlic, and red pepper. Once we have these ingredients combined, we can pour the mixture all over the beef and vegetables in the crock pot.

Now we can start cooking everything together. We'll cover the crock pot and set it to low for seven to eight hours. If we're in a hurry, we can cook the dish on high for three and a half to four hours.

While we wait for the beef and vegetables to cook, we can start preparing the quinoa or rice. We should follow the cooking instructions on the package. If we don't have instructions, a general way to cook both is to pour one cup of quinoa into two cups of water yielding three cups of cooked quinoa at the end of the cooking process. We'll bring the water to a boil, pour in the quinoa, stir briefly, and then simmer the quinoa until it has absorbed all the water. Next, we'll turn the heat off but leave the pot on the stove for it off the stove and let it sit uncovered for about for ten minutes.

If we want to add snap peas to this delicious dish, we need to do so during the last fifteen minutes of cooking. We also need to verify that the crock pot is set to high for this last portion of cooking time.

After the allotted time, everything should be thoroughly cooked and ready to serve. We can serve the beef and vegetables over quinoa or rice that we cooked earlier.
