Beef heart is the heart of the cow, usually sold in halves. Its meat is one of the leanest one can find. While beef heart has a slightly chewier texture than other beef, yet it can become a delicious main course, when prepared correctly.
Beef heart is an easy dish to prepare, especially if we have other tasks to complete while we cook. That's because the best way to prepare a beef heart is by slow cooking it in a crock pot.
We start by thawing out your beef heart for a couple hours. Once the heart has thawed out, we can take it out of the paper and cut it into bite sized pieces.
Next, we place it in the crock pot and set the crock pot to low for seven to eight hours. We could cook the meat faster, if we were in a hurry. However, meat cooked quickly often turns out tough and dry instead of tender and juicy. The key to preparing a satisfyingly tender heart is slow cooking. If we need to cook the beef heart in a crock pot on high, we recommend cooking it for three and a half to four hours.
When able, we should check in on the heart at regular intervals to confirm that it's cooking and that it isn't becoming dehydrated. If the heart appears to dry out as it's cooking, we'll need to add a few tablespoons of water to the crock pot to keep the meat hydrated.
The heart can be seasoned at the beginning of cooking or at some other time during the process.
After the allotted time, the beef heart should be quite tender and thoroughly cooked. When the meat is fully cooked, there should be no blood left in the meat. It should take on a brown color and should be void of all red color. An easy way to serve is with rice and soy sauce. Alternatively, other vegetables can be cooked in the crock pot along with the beef. However they'll need to be added at the half way point of your cooking time.
